meat we produce:
Everything we produce comes from our
little farms; we do not buy in any meat
and are committed to reducing food miles.
We offer a very limited quantity of
carefully butchered and hung meat per
year. You can visit us at any time of
the year to see how your beef and lamb
is being grown.

The
little farms of The May comprise a diversity
of terrain and habitat from hill
to bog; we also graze nearly 100 hectares of
conservation land.
Highland
Cattle are probably the most natural and
un-mucked about with breed of cattle that
it is possible to find in the UK.
You
may hear or read of “grass fed
beef” but the quality of the
pasture is important. It stands to reason
that single species grass pasture is liable
to produce bland, boring meat.
Our
cattle browse on the molynia and marsh
plants of Tregaron Bog and Cors Fochno
near Borth. Nearer home they craze on
the whin, raspberry, bramble and heather
of a 1400-foot mountain or on the nettles,
ash, sycamore and fescues in the fields
below. This eclectic mixture of herbs
and grasses is reflected in the rich,
complex taste of the meat. Moreover, if
you buy from us you are truly doing your
bit for the environment.

Our
Welsh Mountain lambs and ewes are native to the
land we farm. Like the cattle,
our sheep graze on whin and heather. Like the
beef the lamb is fragrant with the scent and taste
of the different grasses and herbs to which they
have access. Mutton is usually available by late
summer after the sheep have had access to the
lush growth. What we produce is true mutton, with
a rich deep taste that is perfect for savoury,
aromatic dishes filled with herbs, spices and
fruit. In late summer you can enrich your barbecue
with full scented succulent chops and leg steaks.
As it gets colder you an truly savour the taste
of autumn!
